The famous Michelin guide revealed on the last January 21 the list of the great winners of 2019. Among the award-winners, a large number of Japanese restaurants and Chefs have been on the list, proving they are booming. L’Abysse

Opening our list and confirming the Japanese trend, L’Abysse is a total immersion in true Japanese cuisine. At the heart of Pavillon Ledoyen, chef Yasunari Okazaki works with fresh fish just as in the land of the Rising Sun, following the rules of Japanese art. From the Ike-Jime fishing technique – a Japanese practice considered the most respectful for fish, which preserves its whiteness, translucency and pure taste – to fish maturation or the very precise choice of the rice. Nothing is left to chance by this master of sushi.

La Poule au Pot

If you prefer to taste the typical French cuisine, La Poule au Pot is a true institution in Paris. Last summer, chef Jean-François Piège took over the restaurant from the 1930s keeping the original Art Deco lounge virtually unchanged. In the kitchen, he revisits the recipes that marked his childhood as butter snails, frog legs with parsley, and white asparagus with mousseline sauce – timeless classics.

La Scène

Part of the Prince de Galles Hotel, the elegant La Scène has just earned its second Michelin star getting into a selective group of restaurants in the city. Using only exceptional products, chef Stéphanie Le Quellec creates simple seasonal dishes such as purple asparagus from Anjou, king prawn from Palamos cooked on a pink salt stone, veal sweetbread with dates, aged Simmenthal beef with black truffle.
